The turnings worth taking
Çiçek Pasajı, the Flower Passage, is the grandest of the arcades — a glazed nineteenth-century gallery of restaurants, touristy but architecturally the real thing. Balık Pazarı, the fish-market lane beside it, sells mussels, tripe soup and rakı at standing counters and is livelier than anything on the main street.
Asmalımescit, at the Tünel end, is the meyhane quarter proper: dense, loud after nine, and where the district's evening actually happens. Çukurcuma, downhill from the middle of İstiklal, is the antique-shop neighbourhood — quiet in the afternoon and the best browsing in the city.

What is at each end
Taksim Square at the top is a transport junction with a monument and a mosque on it — the M2 metro, the F1 funicular down to Kabataş, and the airport coaches. It is a place you pass through rather than visit.
Tünel at the bottom is the upper station of the 1875 funicular that drops to Karaköy in ninety seconds, and the point where the street becomes Galata: steeper, older, and heading toward the tower.
Walking downhill from Taksim to Tünel is the right direction, both for gravity and because it ends at the water.
